Extra virgin olive oil AOP Provence

Our extra virgin olive oil AOP Provence comes from the Jaumore estate, located in Velaux, just a short distance from Aix-en-Provence. The orchard, made up of around 1,500 olive trees planted at the end of the 19th century, brings together emblematic Provençal varieties—Salonenque, Aglandau, and Bouteillan—cultivated according to the strict principles of Organic Agriculture.

Fresh and generous, this AOP Provençal olive oil offers a fine intensity on the palate, with notes of fresh grass and a balance that alternates between liveliness and roundness.

How should extra virgin olive oil be used properly in cooking?

Extra virgin olive oil is a valuable ingredient, both flavorful and beneficial for health. To make the most of it, it’s essential to use it appropriately, taking into account its composition.

Used raw, it reveals its full aromatic richness. It is perfect for:

    • salads and vegetables, both raw and cooked
    • grilled or baked fish
    • purées (potato, sweet potato, etc.)
    • pasta
    • and even on freshly cut strawberries!

For gentle cooking, it can be used over low to medium heat to sauté foods without burning them, for oven cooking, or for slow-cooked dishes,

taking care not to exceed 180°C (356°F) in order to preserve its nutritional and sensory qualities.

In baking, it can replace butter in certain recipes and add a Mediterranean touch. It provides a light texture and a subtle flavor.
