The Tanche olive, also known as "Nyons," is a variety of olive typically cultivated in the Nyons region of France. These small olives, dark purple almost black in color, are renowned for their tender and juicy flesh, as well as their mild and slightly sweet flavor.
They are often used to produce high-quality olive oil but can also be consumed as they are, as an aperitif or to accompany Mediterranean dishes. Tanche olives are harvested when fully ripe, which gives them the melt-in-the-mouth texture so appreciated by connoisseurs.

From Fruit to Olive Oil
The production of extra virgin olive oil from the Tanche variety involves several steps. Firstly, Tanche olives are harvested when fully ripe, typically between late October and early November.
This variety is known for its tender flesh and mild flavor, ideal for producing a fruity and balanced olive oil.
Generally, it takes about 5 to 6 kg of Tanche olives to produce 1 liter of high-quality extra virgin olive oil. This quantity may vary depending on yield and extraction method used, but the exceptional quality of this variety always makes it worthwhile.
