Cashew nut
The cashew nut, also known as the " mahogany nut " or "anacardium", originates from northeastern Brazil but is now widely cultivated in tropical regions around the world. The cashew tree is valued for its ability to grow in challenging conditions and for its versatility.
This nut is actually the seed of a fruit called the cashew apple, which grows on the cashew tree. About 3 cm long, it has a toxic and allergenic shell and contains an edible white kernel: the cashew nut.
The cashew nut is an oilseed primarily used as a snack or incorporated into dishes. Very fatty, it can also be processed into a spreadable paste. After harvesting, the cashew nuts are roasted and salted before being eaten.
From Fruit to Cashew Nut Oil
The harvesting season for cashew nuts typically occurs in the fall, between September and November, when the nuts naturally fall from the trees. Cashew nut production is mainly carried out in regions like the southern United States, where the climate is favorable for their growth.
To obtain virgin cashew nut oil, approximately 68 kg of nuts are required to produce one liter of oil.
