Ingredients
- 2 chicken breasts
- 100 g sausage
- 8 slices bacon
- 2 tablespoons pistachios, coarsely chopped
- 1 tablespoon fresh thyme
- 1 tablespoon chopped sage
- 4 tablespoons Guénard Pistachio Oil
Preparation
Mix the sausage, pistachios and spices. Open the chicken breasts parcels and stuff them with the sausage mixture. Over plastic wrap, brush with oil and spread out the chicken fillets, then arrange 4 bacon slices on top. While tightening as much as possible, roll up the plastic wrap and twist the ends to form a "candy". Place the ballotines in boiling water for about 25 minutes. Remove the ballotines from the water and remove the plastic wrap. In a frying pan, put a little oil and sauté the ballotines on all sides. Cut the ballotines into slices (about 4-5 per ballotine). Keep warm and pour a splash of pistachio oil before serving. You can serve these ballotines with potatoes flavored with rosemary.
